North African

Why we love it: Having spent big chunks of her childhood travelling across Morocco by mule, donkey & grands taxis Sara was keen to introduce Simon to the country 15 years ago & it’s exotic flavours & warm hospitality - needless to say he too was won over!

 

Sweet & savoury flavours combine with aromatic, cumin, coriander, cinnamon, ginger, clove, saffron, paprika, turmeric & ras el hanout with heaps of mint, sesame, almond, date, orange, honey & preserved lemon - a heady mix!

Mediterranean

Why we love it: Sara is half French & as well as spending many Summer’s eating fresh French food with her family (melons straight from their garden was always a highlight) she studied in Aix-en-Provence for a year, known for its great restaurants, where she got to sample the Provençal coastal delights & experiment with produce from the multicoloured food markets! Simon’s Francophile Dad ensured they spent family holidays in France (or Wales!!) .

 

(Northern/European Mediterranean): The triad of olives; wheat & grapes at the core of dishes - fresh ingredients bursting with sunshine & robust flavours perfect for summer eating! Why we love it: In 2016 we did the Mongol Rally; part of the journey took us though the fabulous Turkey & onto Iran - where we fell in over with this gem of a country: its food & people - it maintains strong regional identity with local specialties: often featuring lots of butter & aromatic sweet-sour notes!

 

Middle Eastern: Exotic & vibrant with fragrant sour notes: saffron, dried lime, barberries, sumac, bharat, za’atar, turmeric, cinnamon, cardamon, cloves, nutmeg, cumin, ginger with pomegranate, sesame, orange blossom, rosewater, honey & dates. So many delicious variations of classics such as hummus, falafel & baklava & each country claiming it as there own!

Why we love it: Having travelled throughout Mexico & Peru and done cookery courses in & around Lima; along with sampling exquisite food across both countries with a definite highlight being Central Restaurant (world’s top 50 restaurant) we are blown away by the depth & variety of food & ingredients in this cuisine!

 

Intense, fresh, bold & colourful! With a wide range of influences (as well as different cuisines) from Indigenous to Spanish, Portuguese, African & even Asian. Maize, potato (in its 1000’s of varieties!), avocado, lime, coriander, chilli, queso & chocolate are awesome pillars with guacamole, tortillas, salsa & mole always topped off with fresh herbs & zingy citrus!

Why We love it: So many trips spent both as a child & adult travelling around Spain sampling Tapas at traditional bars & buying fish market produce to rustle salads whilst camping!

Why we love it: What can we say, Simon is from Birmingham - British-Indian food is in his culture - his first meal out in the 80s was in one of the famous Balti houses in Sparkhill!

Glassware & linen are not included but we offer glassware hire at 26p (2023 27p) per item (including delivery, lay up & clear away) & can offer advice on linen hire/purchase.  

The only 2 potential additional costs would be for a kitchen setup within a venue/ marquee with little or no Commercial facilities & staff equipment travel costs to a venue some distance from our base in Bwlch, nr Brecon. 

Both these costs are dependent upon the menu & Guest numbers & will be quoted upon request.
